What’s brick cheese?

 

Brick Cheese is an American original that is intended to be a drier and milder version of the traditional Limburger cheese. The final cheese is relatively sweet cheese with higher moisture.

 

Making me think early... Um... It's fairly mild, but I like it when it's on the saltier side, can be a bit crumbly but melts very well and is sometimes used on pizza, usually white and rectangular with lots of tiny holes in it, supposedly named because they originally used bricks to press it. I guess to me it tastes like an extremely mild parmesan but it's soft enough to deli slice.

Oh my gosh I've been putting it in everything. And it's full of dissolvable fiber, so it's good for your gut health and helps to lower bad cholesterol.

And a secret: if you drop a tablespoon or two into 3/4 of a cup of cream and something sweet like honey, put it in the fridge and come back after an hour or two, it's just like pudding. Easy treat!

 

I tried to do chia and probably still have some. I couldn’t get past the texture. I’m glad you like it because it is good for you. I wish I did because I’ll be 107 next week.
